Clam sauté

Ingredients: clams, 5 tablespoons of olive oil, 2 gloves garlic, hot chilli pepper (not obliged) parsley

Preparation: Soak the clams in salted water for at least 4 hours to remove all the sand. Drain well. Sauté the garlic and a little of hot chilli pepper in olive oil and add clams, sprinkle with chopped parsley, cover and cook for few minutes, until all the clams open. Remove from the stove, garnish again with chopped parsley and serve with grilled bread.
