Artichoke Parmigiana


Ingredients: 1 artichoke, 1 egg, peanut oil, flour, mozzarella cheese, basil.

Preparation: Clean and peel the artichoke. Cut into slices and put in a bowl with water and lemon. After dip artichoke in flour and beaten egg. After fry it for 5 minutes in peanut oil. Dry the artichoke on absorbent paper to remove the excess oil. Cover the bottom of a roasting tin with the fried artichoke, cover with slices of mozzarella cheese, basil and grated parmesan. Cover with a second layer of fried artichokes and sprinkle with parmesan cheese. Bake at 360F.
